Aula Alimentació Sostenible Barcelona brings food transformation to the Gastronomic Forum

From 3 to 5 November, the Montjuïc complex of the Fira de Barcelona will become a laboratory of ideas, gastronomy and dialogues to inspire the present and future of a sustainable restaurant trade.

This space, organised by Barcelona City Council, in collaboration with Mercabarna

will function as a laboratory of sustainable ideas and practices over a three-day period, where real-life projects will be showcased that demonstrate that the transformation of the HORECA sector (hotels, restaurants, catering and cafes) is possible, profitable and necessary. It will serve as an essential meeting space for professionals, producers, suppliers, institutions and companies that are striving for a gastronomy based on sustainability, proximity and social justice.

A living space with four pillars of work

The Classroom will be structured around four thematic pillars that define the city’s food sustainability:

  • Planet: with initiatives to reduce waste, optimise the use of water and energy and combat food waste.
  • Product: which pursues cuisine with identity based on local produce, biodiversity and traceability.
  • People: as the centre of a gastronomic model that promotes inclusion, training and health.
  • Heritage: which places value on ​culinary knowledge and traditions as part of the local cultural and economic legacy.

A schedule that inspires the sustainable transition

The initiative will boast a diverse programme with talks, panels and live cooking, which will demonstrate how sustainability can be applied from the kitchen to the management of establishments.

Important activities include debates on circularity and waste management (Go Zero Waste), technological innovation applied to sustainable catering and regenerative agriculture and local biodiversity (Catalunya Regenera). The event will also look at cooking as a tool for social inclusion and vocational training (Oportunitat laboral per a tots), as well as the value of gastronomic heritage and the challenges of preserving culinary identity in the age of globalisation (Patrimoni viu: el valor del llegat culinari).

The space will feature live culinary demonstrations and the participation of local entities, companies and projects that have integrated sustainability into their daily activities.

Aula Alimentació Sostenible was created with a view to serving as a platform for making initiatives visible, connecting professionals and fostering partnerships between the public and private spheres. Its aim is to contribute to strengthening a sustainable restaurant ecosystem in Barcelona that serves as benchmark both at a local and global level.

As part of this initiative, Barcelona demonstrates its international leadership in promoting gastronomy that cares for people and the planet, and consolidates its position as a leader in urban food policies.
